For a paladin its wholely on what youre wanting to do. If you wanna be ret, go human, their increased weapon skill passive will come in handy, also not to mention easier rep grinds and perception. Dwarves have an okay racial in the form of stone form, that might make it okay for tanking but id youre looking to do endgame content no guild is gonna take a paladin tank unfortuneatly, even ret is a stretch tbh. Still though, this is my opinion. Good luck in classic! Ill be horde so ill probably fight you at southshore lol

Dwarf for paladin and priest, human is very good for pve especially for warriors and rogues (sword spec)
